  • Turkish delight, lokum or in arabic called rahat’ul hulkum means “troat comfort” is a family of confections based on a gel of starch and sugar. Premium varieties consist largely of chopped dates, pistachios, and hazelnuts or walnuts bound by the gel. Traditional varieties are mostly flavored with rosewater, mastic, bergamot orange or lemon. The confection is often packaged and eaten in small cubes dusted with icing sugar, copra or powdered cream of tartar, to prevent clinging. Other common flavors include cinnaman and mint.
    Instead of lokum was known in Anatolia from XV. century, first time it was produced in big quantities and introduced to Europe by Haci Bekir. Hac─▒ Bekir open his confectionery shop in Bahcekap─▒, Eminonu 1777, and the company still operates under the founder's name.


  • Baklava
  • Baklava is characteristic of the Ottoman Empire cuisines. It is prepared with many layers of dough in large pans. To prevent layers of dough to adhere applied melted butter and vegetable oil between dough layers. During arranging of layers of dough, one, two or three layers of chopped wallnut or mainly pistachio added between layers of dough and sometimes added on top also. A whole dried spice has the longest shelf life, so it can be purchased and stored in larger amounts.
    Spices are sometimes used in medicene, religious rituals cosmetics or perfume production, or as a vegetable.
